About culinary education in Italy
How culinary education is structured
Professional cookery training in Italy is delivered mainly by private culinary schools and regionally accredited training bodies alongside state hotel-school (istituti alberghieri) routes. Some schools state that regional professional qualifications are issued on request to the public administration and are linked to an EQF level, while the school diploma itself is a provider-issued award.

Qualification structures
Names and levels are local to Italy. Similar names in other countries are not interchangeable.
- Regional professional qualification (e.g. Tecnico della produzione pasti)
- ALMA states that its Corso Superiore leads to a regional Certificato di Qualifica Professionale relating to 320 classroom hours plus 180 hours of stage, and that each regional qualification is linked to an EQF level (level not stated on the page). Source
- School-issued diplomas and master programmes
- Schools such as ICIF and Congusto issue their own diplomas or master titles after short or one-year professional courses; these are provider awards, not academic degrees. Source
Languages, tuition and admissions
Teaching languages. Most professional courses are taught in Italian; several schools run English-language or interpreted tracks (check each programme page).
Tuition context. Private professional courses are fee-based and priced per course: for example EUR 2,900 to 5,950 for ICIF short courses with accommodation and meals included, EUR 8,800 to 22,000 for ALMA courses, and EUR 11,000 to 12,500 for Congusto cookery. Prices are as published on the school pages in October 2026. Source
